Get Your Family Back to the Table with Libby's Fall Recipes + Giveaway



Fall is my favorite season.  There's something about crunchy leaves, apple cider, and cool weather that just makes me smile.  Plus, one of the best things about fall is that comfort foods seem just right to eat everday.  If you're searching for some new recipes to try out and are hoping to get your family gathered around the dinner table more often, head over and check the selection from Libby's Fruits & Vegetables

A particularly yummy-sounding recipe is the Carrot Cake Bites.  I'm all about mini-treats (cupcakes, cake pops...you name it, I'm there).  This variety is an excellent snack choice for the whole family, because unlike those super sweet things I love, these are filled with whole wheat flour and carrots and are also low in sugar and fat.  Here's the recipe if you would like to try them for yourself!


Carrot Cake Bites:
  
·1 c all-purpose flour
·¾ c whole wheat flour
·2 tsp baking powder
·1 t baking soda
·¼ t salt
·1 t cinnamon
·1/3 c vegetable oil
·½ c sugar
·½ c fat-free milk
·2 eggs
·1 cn 14.5 oz. Libby’s Sliced Carrots, drained, rinsed and masked with a fork (turn the kids loose with a fork to mash the carrots for you - it will probably become a family tradition!)

Coat two mini-muffin pans with non-stick cooking spray. Preheat oven to 350°F. In a large bowl, whisk together flours, baking powder, soda, salt and cinnamon.

In a medium bowl, mix together oil, sugar, milk and eggs. Pour egg mixture into flour mixture and stir just until combined. Gently stir in carrots.

Spoon about 1 tablespoon of batter into each cup of mini muffin pans. Bake for 10-12 minutes until toothpick inserted into center comes out clean. Repeat with remainder of batter.

If desired, stir together a simple icing of 1 tablespoon orange juice, ½ teaspoon vanilla and 1 cup powdered sugar.

Libby's is encouraging families to Get Back to the Table, and this recipe (or another from their extensive database) may just do the trick!  Around here, we're trying to make it a habit to eat dinner around the table every night - even before the little guy realizes what's going on.  I'll definitely be using more of Libby's recipes to create some comfort food for my family this fall - will you?

  1. Thanks for the great giveaway! I do a lot of baking because we have so many food allergies. It would be nice to get some more baking goodies. :)
