Fall time is officially here. There is a chill in the air, we have donned our jackets and picked out our pumpkins. As you may or may not know, pumpkins are not the only great thing harvested at this time of year. Tomatoes are being plucked for your enjoyment. I have to admit that hubby and I are not the biggest tomato fans - but we do enjoy plenty of tomato flavored things!
Red Gold Tomatoes - a family-owned business based in Indiana - is currently harvesting this years tomatoes to bring to your family. It takes less than an hour from the time a tomato being picked to when it is taken to the canning facility. Red Gold Tomatoes strives to ensure that their tomatoes are canned while still extremely fresh. Below is a new recipe from Red Gold for a "Simple Italian Skillet Dinner."
Servings: 6
Preparation Time: 10 minutes
Cook Time: 20 minutes
Ingredients
1 lb. Italian sausage
1/2 cup chopped green bell pepper
1 medium onion, chopped
1 (14.5 ounce) can Red Gold Diced Tomatoes or 1 (14.5 ounce) can Red Gold Petite Diced Tomatoes
2 cups Red Gold Vegetable Juice From Concentrate
1 1/2cups instant white rice
1cup (4 ounces) shredded mozzarella cheese
Directions:
In large skillet cook sausage until no longer pink, 4 to 6 minutes. Drain off excess fat. Add green bell pepper and onion; cook until crisp. Add RED GOLD DICED TOMATOES and RED GOLD VEGETABLE JUICE; cook and stir until mixture boils. Remove from heat and stir in rice. Cover and let stand 6 to 8 minutes or until liquid is absorbed. Sprinkle with cheese; cover and let stand until cheese is melted.
