BEST CROCKPOT POTATO SOUP EVER
1 30oz. bag of frozen, shredded hash browns (any brand but Ore-Ida is on sale this week at HyVee)
3 14oz. cans of chicken broth or 1 box chicken broth
1 can of cream of chicken soup
1/2 cup onion, chopped
1/4 tsp. ground pepper
1 pkg. cream cheese -- don't use FAT FREE it won't melt properly
YUMMMMMM
Combine everything EXCEPT for the cream cheese in the crockpot. Cook for
6-8 hours on low heat, or if you are like me and forget until lunch 3-4 hours on high works too. About 30 minutes before serving, add cream cheese
and keep heated until thoroughly melted. Serve with cheese, sour cream,
bacon bits, green onions, or whatever sounds yummy!! I use my immersion blender after the cream cheese is melted to make the soup super creamy!!!
This is seriously the best tasting and easiest Baked Potato Soup ever! The kids and everyone loves it and I promise it will be one of your new GO TO recipes.
OPTION: I use Ore-Ida potatoes o-brien as an option and omit the onion.
